This is a rare Halwa recipe made during Rabindranath Tagore' times. It is almost a lost recipe. I saw this recipe on Epic channel and gave it a try. It is a delicious recipe with the unusual mix of cauliflower, khoya and nuts.

Epic Halwa

Ingredients to make Epic Halwa

  • 250 grams Cauliflower
  • 100 grams sugar / or as per taste
  • 50 grams Khoya/ Mawa
  • 3-4 Tbspn Pure ghee
  • A handfull of cashews (unsalted)
  • 1/2 cup Raisins
  • Few cardamom seeds
  • Few strands of Saffron

How to make Epic Halwa

  1. Open florets of cauliflower and wash well
  2. Boil now in enough water and strain out in a collander well
  3. Now mash well with a Masher
  4. Heat ghee, fry the raisins and remove
  5. And then splutter cardomom seeds ,adding mashed cauliflower along with sugar to it
  6. Roast this well lightly and add Saffron now
  7. Add khoya and cashews to the roasting halwa stir well for ten minutes
  8. As the aroma comes remove in serving bowl and garnish with remaining Cashews
  9. Serve hot
My Tip: Use ghee sparingly to roast cauliflower well and use fresh khoya. After adding khoya roast the mixture well.
