How to make #Bhapa Doi

  1. Take 1/2 cup hung curd, 1 cup milk powder, and half cup fresh cream.
  2. In a mixing bowl add curd and milk powder.
  3. Mix well.
  4. Add fresh cream to curd mixture and mix well.
  5. Pour this mixture into oven proof bowls or moulds. Fill 2/3rd as it will rise little while baking though set down after removing from oven.
  6. Heat a cooker for five minutes.
  7. Don't forget to remove the whistle.
  8. Take an oven proof tray and fill with 1 cup water.
  9. Put a stand in cooker.
  10. Place water filled tray over stand in cooker.
  11. Place curd mixture bowls in tray.
  12. Cover the lid of cooker without whistle and put the flame on medium.
  13. Let it cook for 15 minutes.
  14. Switch off the flame.
  15. Open the lid after 30 seconds.
  16. Remove the tray from cooker and let it cool down.
  17. Place the baked curd moulds in refrigerator to chill for 4 to 6 hours.
  18. When chilled serve as it is topped with nuts and fruits, or demould first and then serve.
My Tip: Curd shouldn't be sour. For hung curd, put curd in a strainer and let it rest untouched for 4 hours.
