Ambo Khatta

Ingredients to make Ambo Khatta

  • Cubed Raw mango 1
  • Coarsely ground garlic cloves 7-8
  • Kadi patta 10-12 leaves
  • Panch phoran 1 tbsp
  • sugar 5-6 tbsp
  • fenugreek seeds powder 1/2 tbsp
  • cumin powder 1/2 tbsp
  • turmeric powder a pinch
  • red chilli powder as per taste
  • salt as per taste
  • oil 2 tbsp

How to make Ambo Khatta

  1. Heat oil in a kadhai and add panch phoran.
  2. Add dry red chillies
  3. Add garlic cloves and Kadi patta and stir for a minute or two
  4. Add the cubed Raw mango and stir
  5. Sprinkle some salt and turmeric powder. Stir and cover with a lid for 2-3 minutes
  6. Once the mango turns mushy or is cooked add sugar and stir well
  7. Add red chilli powder, cumin powder, fenugreek powder and mix well. (Add salt as well if needed)
  8. Turn off the gas, cool it before you serve it.

My Tip:

To get fenugreek powder and cumin powder, dry roast both of them separately on low flame till they turn almost black. Make this recipe on low flame.
