Ingredients to make Whole Wheat Carrot Loaf

  • 2 cups carrots, grated
  • 2 cups whole wheat flour
  • 1 cup avocado oil
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon powder
  • 1 tsp nutmeg powder
  • 1 cup walnuts, chopped
  • For the icing -
  • 1 cup hung curd
  • 1/2 cup mashed avocado

How to make Whole Wheat Carrot Loaf

  1. Preheat the oven to 180 degrees C and grease the base of a loaf tin.
  2. In a bowl, whisk together the oil, sugar and eggs. Add the carrots, walnuts, vanilla extract, cinnamon and nutmeg to this mixture and continue to whisk.
  3. Add the sifted flour, baking powder and salt and mix well until blended.
  4. Pour the batter into the loaf tin. Bake for about 30 minutes until done. You can check by testing with a toothpick.
  5. Meanwhile, add the hung curd and mashed avocado in a bowl and beat to form a thick consistency.
  6. Let the loaf cool for sometime and spread this mixture over it. Garnish with walnuts.
