ABOUT Kadhai Paneer RECIPE

Apart from the regular Paneer Butter Masala, Matar Paneer and Chilli Paneer,Kadhai Paneer is an equally famous North Indian Recipe. As the name suggests Kadhai Paneer is usually rustled up in the standard Indian wok or the Kadhai. It is primarily a semi dry gravy.

Ingredients Serving: 5

  1. 2 tablespoon of ginger paste
  2. 2 tablespoon of garlic paste
  3. Rough paste derived out of 3 medium sized red onion
  4. 2 regular sized tomatoes pureed
  5. 1 inch of ginger finely julienned
  6. 1 tablespoon of sugar
  7. 2 onions chopped in cubes
  8. 1 teaspoon turmeric powder
  9. 1 tablespoon of chilli powder
  10. 1 tablespoon of dry roasted and grounded Coriander powder
  11. 2 Bay Leaves
  12. 2 dry red chillies
  13. 5/6 green chillies slit into halves
  14. 2 cups of cubed green bell peppers
  15. 500 gms of paneer cut into cubes
  16. 6/7 tablespoon of refined oil
  17. Salt to taste

Instructions

  1. Heat 3 tablespoon of refined oil in a Kadhai( Indian Wok)
  2. Add a table spoon of sugar. Caramelize the same
  3. Make a runny paste of all the dry spices with water.
  4. Add the spice paste in the hot wok.
  5. Sauté until the raw smell goes off, the moisture disappears and it gets a gorgeous red colour.
  6. Add the ginger garlic paste, onion paste and tomato paste. Cook until the raw smell goes off and the moisture disappears from the gravy
  7. In a separate non- stick pan, start shallow frying the paneer cubes. Once done keep it aside.
  8. 8. In the same wok sauté the dry red chillies, julienned ginger, cubed onions, bell peppers and slit green chillies one by one. Adjust your cooking oil accordingly. Donot overcook.
  9. 9. Now add the sautéed items in the gravy one by one.
  10. 10. Adjust salt. Keep it on low flame for 5/6 mins.
  11. 11. Once done keep this on a standing time of 5 mins.
