Ingredients to make Karanji

  • For Filling
  • Fresh coconut scrapped 1 cup
  • Milk 2 cups
  • Sugar 3/4 cup
  • Dry fruits of your choice (chopped)
  • Cardamom powder 1/6 teaspoon
  • For crust
  • all purpose flour (maida)1 cup
  • Fine semolina(Rava) 1 cup
  • Clarified butter 2 tablespoons
  • Pinch of salt
  • Milk/Water as required to make dough

How to make Karanji

  1. In a heavy bottom pan cook milk and coconut until all milk reduced( stir occasionally)
  2. add sugar and cook till you get semi dried mixture
  3. Let cool this mixture completely
  4. add dry fruits and cardamom powder
  5. your feeling of karanji is ready
  6. meanwhile take rawa and maida in a bowl add Pinch of salt and hot ghee
  7. lightly mix everything
  8. add milk and knead soft dough
  9. cover the dough with a moist muslin cloth for 10 minutes
  10. now take a small portion of the dough and roll it
  11. Fill the stuffing and make shape of karanji
  12. Seal the edges tightly
  13. cut edges with cutter
  14. deep fry these karanjis till crisp and Golden
My Tip: Fry karanji on low heat then it will be crispy
