Boondi And Boondi Kheer

Ingredients to make Boondi And Boondi Kheer

  • 1 cup or 250 grams besan ( gram flour)
  • Water as needed to make a thick flowing batter.
  • For the sugar syrup -
  • 2 cups sugar
  • 1 Cup water
  • Oil for deep frying the boondi
  • For making kheer -
  • 1 liter full cream milk boiled and reduced to half.
  • Chopped dry fruits of your choice to garnish the kheer.

How to make Boondi And Boondi Kheer

  1. Mix the besan and enough water to make the batter. Whisk well so that there are no lumps.
  2. Boil the sugar and the water to make a syrup of one string consistency.
  3. Heat oil to the smoking point
  4. Pour the batter on a perforated spoon ( boondi jhara) to let droplets fall into the oil.
  5. Let the boondi rise to the top of the oil in the pan . Take them out , drain well and put into the warm syrup.
  6. Leave for a minute and remove from the syrup with the help of a slotted spoon.
  7. Place on a plate and serve hot.
  8. To make the boondi kheer simply add the boondi to the prepared thickened milk and mix well. Garnish with cashew nuts, raisins , candied red cherries. Serve warm or chilled.
