ABOUT Sugarfree Sondesh Stuffed Black Dates RECIPE

This sondesh stuffed dates sweet is specially for diabetic and health concious people. It is made up of sondesh which is made from cheese, roughly ground walnuts and black dates.

Ingredients Serving: 4

  1. Milk 800 ml
  2. Curd 1/2 cup
  3. Cardamom powder 1/2 teaspoon
  4. Walnuts roughly ground 2 table spoon
  5. Deseeded black dates 200 grams
  6. Cherry 2 table spoon for garnishing

Instructions

  1. Stuffing (sondesh) preparation method-
  2. Bring milk to boil add 1/2 cup curd stir the milk after some time you can see milk start curdling.
  3. Strain and wash with cold water, squeeze out excess water by pressing with the spoon.
  4. Keep this cheese(paneer or chena) aside for 30 minutes to 1 hour so that all the water comes out from cheese.
  5. Transfer cheese in a platform and knead well for 6-8 minutes with the help of back of your palm.
  6. Transfer moist cheese and cardamom powder in a nonstick pan and fry in a low flame till it begins to leave sides and looks crumbly to make a moist and gooey sondesh stuffing.
  7. Switch off the gas and allow sondesh to cool down, add roughly ground walnuts and knead lightly to make a fine sondesh dough.
  8. Deseed all the dates.
  9. Take deseeded date one at a time and start filling with ready sondesh stuffing.
  10. Your sugarfree sondesh stuffed black dates are ready to serve.
