Carrot Cake Muesli Cookies

Ingredients to make Carrot Cake Muesli Cookies

  • 1 cup carrots, grated
  • ¾ cup bajra flour
  • 1 cup muesli
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • pinch of salt
  • ¼ cup coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup maple syrup

How to make Carrot Cake Muesli Cookies

  1. Preheat the oven to 180 degrees C and line a baking sheet with parchment paper.
  2. In a bowl, whisk together bajra flour, baking powder, baking soda, cinnamon and salt.
  3. In another bowl, cream coconut oil, egg, and vanilla. Do not overbeat.
  4. Stir in the maple syrup until thoroughly incorporated.
  5. Add the dry ingredients, stirring just until incorporated. Fold in the grated carrots. Chill the dough for an hour in the fridge.
  6. Drop the cookie dough on the baking sheet. Bake for about 20 minutes. Transfer onto a wire rack to cool.
