Carrot Payasam Or Gajar Kheer

Ingredients to make Carrot Payasam Or Gajar Kheer

  • carrots (medium) 4
  • Milk 1 litre
  • sugar 4 tablespoon
  • Custard powder (vanilla) 1 and 1/2 tablespoon
  • ghee 4 tablespoon
  • cashew and raisin for garnishing

How to make Carrot Payasam Or Gajar Kheer

  1. Wash carrots, trim the edges and peel off the skins.
  2. Grate and keep aside.
  3. Heat ghee in a heavy bottomed pan over medium flame.
  4. Shallow fry cashew nuts and raisins separately, transfer them to a plate.
  5. In the same pan, add the grated carrots.
  6. Stir them continuously and cook for 4 to 5 minutes.
  7. Now add milk and cook on medium flame, stirring continuously for 5 to 10 mins or till the milk reduces slightly.
  8. Next add sugar and mix well.
  9. Stir for 1 to 2 minutes.
  10. In a small bowl, dissolve custard powder with 3 tablespoon milk completely.
  11. Add it to carrot-milk mixture, stir well and cook for 1 minute more or till the mixture thickens.
  12. Turn off the flame.
  13. Transfer to a serving bowl and garnish with cashew nuts and raisins.
  14. Serve this delicious carrot payasam or gajar kheer warm or chilled
