Ingredients Serving: 5

  1. Aval / poha: 1 cup
  2. Chopped carrot: 2 tbsps
  3. Chopped onion: 2 tbsps
  4. Sprouted green gram: 2 tbsps
  5. Green chilli: 3 nos
  6. Red chilli: 1
  7. Chopped ginger: 1/4 tsp
  8. Mustard seeds: 1/4 tsp
  9. Lemon juice: 1/4 tsp
  10. Curry leaves: a few
  11. Salt acc. to taste
  12. Oil as required

Instructions

  1. Wash and soak poha in water for 5 minutes till it turns soft.
  2. Heat oil in a pan, add mustard seeds and allow it to splutter.
  3. Add the chopped green chillies, ginger, curry leaves, broken red chilli and fry.
  4. Add the chopped onion now and fry till they turn translucent.
  5. Add carrot, sprout, salt and mix.
  6. Sprinkle little water and cook the vegetables on low flame.
  7. Add the poha now and mix everything well.
  8. Cook for a few minutes, switch off the flame, add lemon juice and mix well.
  9. Serve hot and enjoy.
