ABOUT Banana Jaggery Loaf RECIPE

There's nothing like a loaf of warm banana bread to cheer you up on a gloomy day.

Ingredients Serving: 4

  1. 4 ripe bananas, mashed
  2. 1 1/2 cups whole wheat flour
  3. 1 tsp baking powder
  4. 1 tsp salt
  5. 1/2 cup olive oil
  6. 1 cup jaggery powder
  7. 2 eggs
  8. 1/2 cup almond milk
  9. Almond flakes for garnish

Instructions

  1. Preheat your oven to 180 degrees C and grease a loaf tin.
  2. In a bowl, whisk together flour, salt and baking powder.
  3. In another bowl, cream jaggery and oil until light and fluffy
  4. Add eggs, one at a time and beat well .
  5. Fold in flour mixture, alternating with milk.
  6. Beat in the mashed bananas.
  7. Pour the batter into the loaf tin and sprinkle the almond flakes over it.
  8. Bake for 40 minutes or until a toothpick inserted in the centre comes out clean.
