Ingredients to make Chocolate Coffee Tomato Teacake

  • 1 cup whole wheat flour
  • 3/4 cup organic brown sugar
  • 1/4 cup cocoa powder
  • 2 tbsp coffee powder
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 egg
  • ½ cup olive oil
  • 2 tbsp tomato juice
  • 1 tsp vanilla extract
  • 1/2 cup yogurt
  • 1 tbsp tomato, finely chopped

How to make Chocolate Coffee Tomato Teacake

  1. Preheat the oven to 180C and grease tartlet moulds.
  2. In a bowl, whisk together flour, cocoa powder, coffee powder, salt and baking powder.
  3. In another bowl, cream sugar and oil until light and fluffy.
  4. Add the egg and yogurt. Beat well .
  5. Fold in flour mixture, alternating with tomato juice.
  6. Pour the batter into the tartlet moulds and sprinkle the chopped tomato over it.
  7. Bake for 30 minutes or until a toothpick inserted in the centre comes out clean.
