Ingredients to make Grape And Lemon Cake

  • 1 cup grapes
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tbsp lemon zest
  • 3/4 cup organic brown sugar
  • 2 eggs
  • 1/2 cup canola oil
  • 1 tbsp fresh lemon juice
  • 2 tbsp milk
  • For the grape mixture -
  • 2 cups chopped grapes
  • 4 tbsp honey

How to make Grape And Lemon Cake

  1. Preheat the oven to 180 degrees C and grease a cake pan.
  2. In a bowl, whisk together flour, baking powder and lemon zest.
  3. In another bowl, cream oil and sugar until light and fluffy.
  4. Add eggs, one at a time, and beat well. Add lemon juice.
  5. Fold in flour mixture, alternating with milk.
  6. In a pan, add the honey and chopped grapes. Stir until the grapes absorb all the honey. Turn off the heat and cool for a bit.
  7. Add this grape mixture to the batter and mix well.
  8. Pour the batter into the prepared cake pan.
  9. Bake for 40 minutes or until an inserted toothpick comes out clean. Decorate with remaining grapes and serve.
