Ginger Amaranth Cookies

Ingredients to make Ginger Amaranth Cookies

  • 2 cups amaranth flour
  • ½ cup ginger powder
  • 2/3 cup arrowroot powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 3 tbsp water
  • 2 tsp vanilla extract

How to make Ginger Amaranth Cookies

  1. Preheat the oven to 200 degrees C and lightly grease a cookie sheet.
  2. In a bowl, whisk together amaranth flour, ginger powder, baking powder, arrowroot starch, baking powder and salt.
  3. In another bowl, beat the oil, water, honey and vanilla extract. Add this to the dry ingredients and mix well.
  4. Use a scoop to place batter on greased cookie sheet so they bake evenly.
  5. Bake for 15 minutes until cookies are lightly brown. Remove from oven and place on wire rack to cool.
