ABOUT Fig Quinoa Pudding RECIPE

A superfood pudding that is healthy, nutritious and delicious.

Ingredients Serving: 4

  1. 1 cup quinoa flour
  2. 2 cups chopped fresh figs
  3. 1 cup milk
  4. ½ cup curd
  5. 2 cups brown sugar
  6. 1 tsp vanilla extract
  7. 1 tsp salt

Instructions

  1. Preheat oven to 180 degrees C.
  2. Using a blender, combine the milk, sugar, curd, vanilla, salt, flour, ¾ of the chopped figs mixture and blend.
  3. Lightly grease a couple of baking moulds and pour the blended mixture into them.
  4. Distribute the remaining figs over the batter in the moulds.
  5. Bake for 30 minutes, until the pudding is puffed and brown or a knife inserted into the center comes out clean. Serve warm.
