Puran Poli

Ingredients to make Puran Poli

  • For puran
  • Gram dal (Split chana dal) 250 grams
  • Sugar 250 grams
  • Jaggary 100 grams
  • cardamom powder 1/4 teaspoon
  • Nutmeg powder 1/4 teaspoon
  • Saffron strands few (Optional)
  • For outer covering dough
  • Wheat flour 1 small cup
  • All purpose flour 1 small cup
  • Oil for moyan 1/2 small cup
  • Salt 2 pinches
  • Baking powder a pinch (Optional)
  • Water to knead the dough

How to make Puran Poli

  1. wash and soak chana dal for an hour
  2. add sufficient (less than double) water and cook dal with nutmeg powder in pressure cooker tlil 2 to 3 whistles(it should be soft)
  3. after pressure subsides open the lid and mash dal with Pav Bhaji masher. Add sugar and jaggery
  4. makes it and cook in cooker only.. keep stirring in between
  5. cook Dal till Semi solid (bounded consistency)
  6. Puran machin
  7. grind through Puran machine
  8. add cardamom powder and Saffron strands and mix well
  9. allow it to cool completely and then make medium balls
  10. For outer covering
  11. take all dry ingredients mentioned above for dough
  12. Add water little by little and knead a soft dough
  13. keep it aside for sometime and need again with adding some more oil it will be gluee
  14. now take a very small portion of dough n make ball..
  15. roll out little with hands and put Puran ball
  16. seal it from all sides
  17. Make a ball
  18. dust it with some rice flour or Maida and roll thin Poli
  19. on home Skillet Shallow fry it with some clarified butter (ghee) on low heat from both side till golden
  20. tastes awesome when served hot with some more ghee
  21. Texture
My Tip: Puran dries after cooling If puran is thin and not able to make ball then cook( roast ) puran again in a nonstick pan.
