ABOUT Chocolate-Banana Muffins (Gluten-Free, Grain-Free, Dairy-Free) RECIPE

These bakery style banana chocolate muffins are fudgey, soft, moist, and gooey. You can start your days with these muffins with a cup of coffee and you wouldn't even know that, they are not only flour free but also extremely healthy. These glutton free, grain free and dairy free muffins will satisfy your sweet tooth without adding inches to your waist.

Ingredients Serving: 6

  1. 2 over ripe bananas finely mashed
  2. 1/4 cup sugar
  3. 2 Eggs
  4. 1/4 cup olive oil or coconut oil (I used olive oil)
  5. 2 cups almond flour (see notes below to make almond flour at home if you don't have almond flour handy)
  6. 1/3 Cup Cocoa Powder
  7. 3 Tbsp coconut flour or rice flour (I used coconut flour)
  8. 1 cup dark chocolate chips.
  9. 1 tsp baking soda
  10. 1 tsp salt

Instructions

  1. To make almond flour at home - Place 2 cup almonds into your blender and blend until you get the flour consistency. They won't be powder like. I would recommend to blend for few seconds. Turn blender on high
  2. Preheat the oven to 350°F .
  3. In a large bowl, mash the bananas, add the sugar and stir.
  4. Add in the eggs and oil and stir until well combined. Add the almond flour, coconut flour, cocoa powder, baking soda and salt and stir just until combined. Do not over mix
  5. Stir in the chocolate chips and Spoon the batter into the muffin liners and bake for like 18 to 20 minutes
