Ingredients to make Kerala Parotta | Malabar Parotta

  • Maida / all purpose flour- 11/2 cup
  • While wheat flour/ atta - 1/2 cup
  • Oil - 1 cup
  • Water - as required for kneading

How to make Kerala Parotta | Malabar Parotta

  1. Take a bowl .add Maida, atta ,1 1/2 tbsp oil .mix Well.. now add Water gradually and knead a soft and smooth daugh.cover it with damp cloth for 20 mins.
  2. Clean your kitchen top..spread some oil on kitchen top.
  3. Take a medium portion daugh .place it on the oil grease kitchen top.
  4. Roll it thin and big as possible. Brush some oil on the thin parota.sprinkle some Maida.
  5. Now hold two corner of top of the parota.
  6. Pleat it like handfan till the bottom of the parotta
  7. Now stretch it little.. roll it sidewise like spiral
  8. Thean press it little and flattan
  9. Roll like paratha ..but do not make thin paratha. As the little thick parota makes it soft.
  10. Put it on the hot tawa. Brush little oil and fry parotta both sides till light brown spots appears and cooked well.
  11. Then keep parotta on a paper towel. Wait for enough warm to touch.
  12. Then place parota in between your two hands and forcefully press parota between your two palms.just like clapping. This will help parotta to keep soft and separate layers..
  13. Now server kerala | Malabar parotta .
