ABOUT Mutton Chukka RECIPE

Mutton Chukka is a Chettinad cuisine from Chettinad region of Tamil Nadu state in South India.The word chukka means ‘Dry Curry’. Mutton Chukka is well known for its spiciness. This is a spicy dry preparation of mutton and is strongly flavored with the spices.

Ingredients Serving: 3

  1. Mutton - 400 gms cubes preferably boneless
  2. Oil - 2 tbsp
  3. Cumin Seeds - 1 Tsp
  4. Cinnamon - small stick
  5. Cardamon - 3
  6. Cloves - 3
  7. Bay leaf - 1 small
  8. Onion - 1 large chopped finely 
  9. Tomato - 1 large chopped finely
  10. Red dry Chilly - 3 or as per your heat preference
  11. Ginger garlic paste - 2 tsp
  12. Turmeric powder  - 1 tsp
  13. Cumin powder - ½ tsp
  14. Coriander powder  - 1 tsp
  15. fennel powder - 1 tsp
  16. Chilly powder - 1 tsp
  17. Garam Masala Powder - 1 tsp
  18. Pepper powder - 1 tsp
  19. Curry Leaves - 1 sprig
  20. Salt to taste
  21. Water - as required
  22. Coriander leaves - 2 tbsp Chopped

Instructions

  1. In a pan heat the oil. Add in the cumin seeds, cinnamon, cardamon, Cloves and the Bay leaf. Let it crackle.
  2. Add in onions, dry chillies, ginger garlic paste, curry leaves and saute for about 2 mins.
  3. Add mutton, salt to taste and mix well.
  4. Cover the pan and cook in medium heat for 10-15 mins till the water released by the mutton dries up.
  5. Add chopped tomatoes and cook till it turns mushy.
  6. Add the Turmeric powder, cumin powder, fennel powder, garam masala powder, chilly powder and pepper powder,mix well and cook for about a min.
  7. Add water, cover the pan and cook on medium heat till the mutton is cooked completely. Mine took about 40-45 mins. Cooking time will differ upon the quality of meat. Add water little at a time and cook till done completely.
  8. Add chopped coriander leaves, cook for a min and take off the heat.
