Ingredients to make How to Prepare Ghee from Homemade Butter

  • Milk cream - 2 cups (fermented with 1 tbspn of sour curd)
  • 1 cup of chilled water
  • A big wide open vessel or utensil with a lid
  • A blender
  • A large heavy bottom vessel or kadai
  • A large slotted spatula or ladle
  • A Strainer with fine mesh
  • A sterilized glass bottle or stainless steel container with lid

How to make How to Prepare Ghee from Homemade Butter

  1. Step 1: Boil full cream milk. Bring it to room temperature. Keep it refrigerated for 5-6 hours or overnight.
  2. Collect the milk cream or malai from the chilled milk using a spoon. (When milk is chilled, thick layer of cream gets collected over the milk making it easy to gather the cream all at once).
  3. Step 2: Store it in fridge until you have collected the desired amount of cream to make butter. For me, it takes about a week to 10 days to have 2 cups of milk cream. It depends upon the quantity and quality of milk that we use daily.
  4. Step 3: Transfer the refrigerated milk cream to a large wide open vessel. Add 1 tbspn of sour curd and mix well. Close it with a lid and keep it on kitchen top overnight for fermentation.
  5. Step 4: Add a cup of chilled water and with a help of a blender, whip the cream until it separates into butter and butter milk. This process takes about 10-15 minutes.
  6. While blending, it is always good to have 1 or 2 minutes break in between to prevent the blender from getting heated. The same process can be done using a mixer with large jar or a food processor.
  7. Some prefer to shake the mixture in tightly closed jar or glass bottle until butter forms. Traditional method of making butter involves hand churning of thick curd or cream using clay pot and rod.
  8. Step 5: Once the butter starts getting solidified over buttermilk, using a slotted spatula, gather the butter while carefully draining the buttermilk from it. Place the butter in a thick bottomed kadai or vessel.
  9. Step 6: Melt the butter on medium heat until it starts boiling. When it starts foaming with sizzling noise, keep the flame low and keep stirring in between.
  10. At this point you can see the foams getting thinner giving way to large bubbles and the milk solids getting attached to the sides of the vessel. Keep scratching the sides of the vessel so that the milk solids don’t get burnt.
  11. Step 7: Simmer the mixture until the sizzling sound stops, bubbles gets clearer and the golden color liquid gets separated from milk solids. The ghee on top gets translucent and the milk solids settled at the bottom starts browning.
  12. Step 8: Now the ghee that looks crystal clear starts bubbling again and this the correct stage to switch off the flame. The golden color ghee with pleasant aroma is ready to be strained and stored.
  13. Step 9: Let it rest for 1 or 2 minutes. Strain the ghee using a fine mesh and store it in a sterilized container. Let it cool before you cover it with the lid. Ghee prepared in this method and properly stored stays fresh for many months.
My Tip: If the ghee is overcooked, the color gets darker and gives off a pungent odor.
