Spinach Baked Rice (one potmeal with veggies )

Ingredients to make Spinach Baked Rice (one potmeal with veggies )

  • Uncooked rice - 1 cup
  • Cottage cheese or paneer cubes - 250 gms
  • Milk - 1 cup
  • Medium sized onion sliced - 1
  • Spinach - 1/2 bunch
  • Broccoli - few florets
  • Garlic cloves - 2
  • Fresh Cream - 2 tbsp
  • Jeera - 1/2 tsp
  • Oregano - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Sugar as per taste and Salt to taste
  • For white sauce:
  • Milk - 1/2 to 3/4 cup
  • Maida/flour - 1 tbsp
  • Butter - 1 tbsp
  • Grated cheese - 1 to 2 cubes
  • Salt and sugar as per taste

How to make Spinach Baked Rice (one potmeal with veggies )

  1. For the rice: take a big pan, heat some ghee and,add onions and let it splutter.
  2. Once the onions turn golden, add the rice, 3 cups water, little salt and let it cook.
  3. For the spinach puree: take some water in a pan, add salt and cook the spinach for about 5 mins. Remove and drain under cold water.
  4. Grind the spinach after cooling it along with garlic cloves in a blender.
  5. Heat oil or ghee in a pan, add the broccoli florets and sauté for few mins. Add the spinach puree and cook for a few mins, add the oregano, black pepper, salt, sugar.
  6. Add the cottage cheese cubes.Now add fresh cream and milk and mix well.
  7. For the white sauce: Take butter in a pan, add maida and cook till light golden brown. Then add milk, sugar and salt and keep stirring so that no lumps are formed.
  8. Now take a borosil or an oven safe bowl and put one layer of spinach gravy, one layer of rice, again a spinach layer, rice and top it with white sauce.
  9. Your dish is ready to serve.
