Ingredients Serving: 10

  1. Ripened bananas ( i took the amruthapali) - 200gms
  2. Sugar - 150gms,
  3. Eggs -3,
  4. Salted butter -200gms,
  5. Sorghum/jonna/char flour - 200gms,
  6. Lime juice 1/2tsp,
  7. Salt -a pinch,
  8. Sodium bicarbonate -1/4tsp,
  9. Baking soda - 10gms,
  10. Groundnuts/cashewnuts pieces - 50gms

Instructions

  1. 1. In a bowl add sugar to salted butter to make a cream,
  2. 2. Add eggs,lime juice, and beat until light and fluffy, to this add mashed bananas.
  3. 3. Sift flour, salt,baking soda, and sodium bicarbonate in a small bowl.
  4. 4. Then mix the flour into the banana mixture. Beat till smooth, add groundnut pieces/walnut pieces to it and mix well,
  5. 5. Grease the bread tin with butter and dust it with flour.
  6. 6. Preheat the oven for 15 mins, then pour the banana batter in the tin and bake it at 200F for 60 min or untill the loaf is golden brown, insert a knife to check the cake is done and the knife comes out clean let it cool to room temperature and then slice it
  7. 7. Serve it with vanilla icecream scoop. Very healthy and yummy.

Thanks for this lovely recipe. My bread was a super hit. I just made a few modifications.... lessened the oil to about 1/2 cup, added 3 eggs instead of 2, added cinnamon powder , cocoa powder and coffee flavors. Awesome healthy
