Minimally Spiced Sukha Gobi

Ingredients to make Minimally Spiced Sukha Gobi

  • 2 tablespoon of refined oil.
  • 1 teaspoon of whole jeera
  • 2 bayleaves
  • 2 pinches of asafoetida
  • 1 Dry red chilli
  • 2 green chillies
  • 2 teaspoons of Kashmiri chilli Powder
  • 1 teaspoon of coriander Powder
  • 1 teaspoon of cumin powder
  • ½ teaspoon of turmeric powder
  • salt to taste
  • Half a cup of chopped tomatoes
  • Fistful of coriander
  • 1 tablespoon of clarified butter
  • 1 teaspoon of sugar
  • 1 teaspoon of Garam masala
  • 500 gms of cut blanched cauliflower florets

How to make Minimally Spiced Sukha Gobi

  1. 1. Heat up an Indian wok, the Kadhai.
  2. 2. Add 2 tablespoon of refined oil.
  3. 3. Once hot add 1 teaspoon of whole jeera and couple of bayleaves
  4. 4. Add couple of pinches of asafoetida , one dry red chilli and couple of green chilli.
  5. 5. Add 2 teaspoons of Kashmiri Chilli powder. Mix well.
  6. 6. Add blanched cauliflower florets.
  7. 7. Add a teaspoon of coriander powder, a teaspoon of cumin powder, half a teaspoon of turmeric powder and salt to taste.
  8. 8. Add a cup of blanched peas. Cook on low heat.
  9. 9. Midway add half a cup of chopped tomatoes. Cook until done.
  10. 10. Finish this with a fistful of coriander, 1 tablespoon of clarified butter, some sugar and some standard Garam Masala.
