Tofu Caprese Bites

Ingredients to make Tofu Caprese Bites

  • onion, sliced - 1/2 cup
  • Cherry tomatoes - 1/2 cup
  • Black olives - 1/2 cup
  • Tofu, cubed – 80 gms
  • Fresh Basil leaves – 1/4 cup
  • Balsamic vinegar - 3 tsp
  • salt to taste
  • pepper - 1/4 tsp
  • garlic paste - 1/2 tsp
  • honey - 1/2 tsp

How to make Tofu Caprese Bites

  1. Make the marinade by mixing together balsamic vinegar, salt, pepper, garlic paste, honey. Adjust seasoning and keep aside.
  2. Marinate pieces of tofu, sliced onions and whole cherry tomatoes in this mixture for 5 minutes (or more if possible).
  3. Just before serving you can add fresh basil, olives and serve as a salad.
  4. You could also make single serving bites by putting a piece of tofu, cherry tomato, olive and fresh basil in a toothpick, with a drizzle of the left over vinaigrette.
  5. I have served the single serving bites with a little low fat mayo on the side to cut through the vinegar (totally optional).

My Tip:

Lots of variations are possible. You could replace tofu with cottage cheese, shredded cooked chicken, mozzarella cheese, etc. If you don’t have balsamic vinegar, then use a mix of sesame oil, soy sauce and apple cider vinegar or white vinegar.
