Chicken and Maggi noodle Soup

Ingredients to make Chicken and Maggi noodle Soup

  • 250 grams boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 4 cups chicken stock
  • 2 cloves garlic, minced
  • 1 tsp butter
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 2 Bay Leaves
  • 1/4 cup heavy cream
  • 1/8 cup all-purpose flour/cornflour
  • 2 packet maggi noodles
  • 2 tablespoons chopped fresh parsley

How to make Chicken and Maggi noodle Soup

  1. Season chicken with salt and pepper, to taste. In a pan, melt the butter and stir fry the garlic, onion, carrots, celery, thyme, rosemary and bay leaves; season with salt and pepper, to taste.
  2. Add in the chicken and the chicken stock and cook for 30 minutes. Remove 1 cup of chicken stock,
  3. Remove chicken and shred, using two forks. In a large bowl, whisk together flour and reserved 1 cup chicken stock mixture.
  4. Stir chicken, flour mixture and noodles into the slow cooker. Cover and cook on low heat till the noodles are tender and soup is slightly thickened. Stir in cream. Serve immediately, garnished with parsley.
