Ingredients to make Eggless Pav bun /Ladi pav

  • all purpose flour 200 grams+little more for dusting
  • dry instant yeast 1 teaspoon
  • milk 100 mililitre
  • sugar 1 teaspoon
  • butter 2 teaspoon
  • Milk powder 1 tablespoon
  • salt 1/2 teaspoon

How to make Eggless Pav bun /Ladi pav

  1. take warm milk dissolve sugar in it.
  2. add yeast and mix well. keep covered for 10 minute at warm place
  3. you will see frothy layer on the top
  4. take all purpose flour add salt and milk powder to it.
  5. by adding yeast form a sticky dough, add more milk if required
  6. transfer the dough to a work surface add butter and knead for 15 minutes
  7. now make a ball of this dough and transfer to a deep greased bowl and cover with cling film or wet cloth
  8. keep the bowl in a warm place for an hour. I kept in oven.
  9. after an hour you will see proofed dough
  10. again punch the dough knead for 2 minutes
  11. divide the dough into 6 equal parts(I have made small 8 balls)
  12. transfer them in a greased baking tray with one inch difference between the balls
  13. cover the tray with wet cloth /cling film to proof again for 45-50 minutes.
  14. fully proofed buns, brush them with little butter and milk
  15. preheat oven at 200 °C, bake these buns for 20 minutes at 180°C.
  16. if you want brown crust bake for 5 minutes more
  17. cover the tray with wet cloth and let the bun cool down and they are ready to serve with bhaji

My Tip:

kneading the dough for 15 minutes is very important . then only you will get soft fluffy buns

Mamta ji I want 2 know 2 things- 1) did u heat the oven for proofing the dough? If yes, at what temp. ? 2) why did u cover the buns with wet cloth after they were cooked ? You could have taken them out to stop their overcooking .

yes in winter season season little preheated microwave /oven is required otherwise no need to heat the oven for proofing .....2 nd cover the buns with wet cloth to avoid dryness /hardness of outer surface of buns.
