This is one of most favourite dish that I learnt from a dear friend almost 18 years back.

Nei Appam, a mouth-watering delicacy which no one can resist. Most people try this amazing dish at restaurants, but with this recipe you can easily make it at home with the same taste. This super quick and easy recipe is written by Anuradha Balasubramanian. Nei Appam is a dish which demands no explanations, it's a whole world of flavour in itself. Nei Appam is a very simple and easy recipe to prepare. The time required to make this recipe is not very much, but the delicious taste it renders is just remarkable. Ingredients to make Nei Appam

  • Basmati rice – 1 cup
  • Grated jaggery – 1 cup
  • Grated coconut – 1 cup
  • Ripe banana – 1
  • Cardamom – 4-5
  • Oil and ghee – for frying

How to make Nei Appam

  1. Wash and soak rice for 2-3 hrs.
  2. Drain the rice completely and grind it along with jaggery, coconut, banana and cardamom to a smooth batter.
  3. No need to add any water while grinding.
  4. Heat the appam pan. Mix oil and melted ghee and keep it ready ( ideally its fried in ghee only).
  5. Add little oil and ghee mixture to all the moulds.
  6. When it becomes hot, reduce the flame and add the batter till its 3/4th filled.
  7. Cook till the underside turns golden brown.
  8. Gently turn the appam, add little more oil and ghee mixture and cook till the other side turns golden brown.
  9. Serve the appam warm:)
My Tip: Cook the Appam in medium hot ghee or oil.
