Ingredients to make Broccoli almond soup

  • Broccoli- 2 cups
  • onion- 1 medium
  • garlic- 5 cloves
  • Black pepper- 1 tsp
  • salt
  • Milk- 1 cup
  • cornflour- 1 tsp
  • almond slivers- 2 tbsp
  • water- 2 cups and more if required

How to make Broccoli almond soup

  1. Prepare all the ingredients.
  2. Take olive oil in a pan. Add garlic and onions.
  3. After the onions becomes translucent, add broccoli and saute.
  4. Now Add salt and 1.5 cup water. And let it simmer for 5 minutes .
  5. After 5 mins you will see that broccoli has cooked. Now take it in another vessel, let it cool and then blend into a paste .
  6. Put this paste in the soup pan. And add one cup of water and milk mixed with cornflour.
  7. Now keep stirring for 2 mins add the pepper powder, roasted almond slivers, mix well and cook on a medium flame for another 1 minute.
  8. After the mixture thickens, add one cup of water. Now take in the bowl, garnish with almond slivers and blanched broccoli florets.

My Tip:

Wash broccoli in hot water and salt so that any insects may be removed.
