ABOUT Broccoli almond soup RECIPE

Healthy and light protein rich soup made from broccoli and almonds.

Ingredients Serving: 4

  1. Broccoli- 2 cups
  2. onion- 1 medium
  3. Garlic- 5 cloves
  4. Black pepper- 1 tsp
  5. Salt
  6. Milk- 1 cup
  7. Cornflour- 1 tsp
  8. Almond slivers- 2 tbsp
  9. Water- 2 cups and more if required

Instructions

  1. Prepare all the ingredients.
  2. Take olive oil in a pan. Add garlic and onions.
  3. After the onions becomes translucent, add broccoli and saute.
  4. Now Add salt and 1.5 cup water. And let it simmer for 5 minutes .
  5. After 5 mins you will see that broccoli has cooked. Now take it in another vessel, let it cool and then blend into a paste .
  6. Put this paste in the soup pan. And add one cup of water and milk mixed with cornflour.
  7. Now keep stirring for 2 mins add the pepper powder, roasted almond slivers, mix well and cook on a medium flame for another 1 minute.
  8. After the mixture thickens, add one cup of water. Now take in the bowl, garnish with almond slivers and blanched broccoli florets.
