Ingredients Serving: 6

  1. For the Bhaji- 1 cup boiled cauliflower
  2. 1/2 Cup boiled Cabbage
  3. 1/2 cup boiled green peas
  4. 1 boiled and chopped Carrot.
  5. 1 large onion, finely chopped
  6. 4 medium size tomatoes, chopped
  7. Salt to taste
  8. 4 boiled potatoes, cubed
  9. 2 teaspoon pav Bhaji Masala
  10. 2 teaspoon garlic - green chilli paste
  11. 1/2 cup finely chopped capsicum
  12. 1 teaspoon red chilli powder
  13. 1/4; teaspoon haldi
  14. Green coriander leaves, to garnish
  15. Lemon wedges, to serve
  16. Onion slices, to serve
  17. Water, as needed
  18. 2 tablespoon oil
  19. For the Buns -
  20. 2 cups maida
  21. 2 cups whole wheat flour
  22. Salt to taste
  23. 1 1/2 teaspoon sugar
  24. 1 1/2 teaspoon active dry yeast
  25. 2 cups Milk
  26. Oil/ butter to brush the buns
  27. 3 tablespoon butter to toast the buns and add to the Bhaji

Instructions

  1. Buns Method - Add sugar to the milk and water mixture.
  2. Heat it to lukewarm.
  3. Sprinkle the yeast gently.
  4. Let stand in a warm place for 10 minutes to froth.
  5. Take the flours and salt.
  6. Add in the yeast and oil.
  7. Start kneading.
  8. The dough will be sticky
  9. Knead for 15 minutes, adding 1 to 2 tablespoon more milk if dough becomes too dry
  10. Make a smooth ball gathering the seam down.
  11. Place in an oiled vessel in a warm place for first rising.
  12. Cover or cling wrap it.
  13. When it doubles, gently punch it and bring the dough together.
  14. Measure out equal size balls.
  15. I got 15 of 40 grams each.
  16. Grease a cake tin.
  17. Roll and smoothen the balls, gathering the seams down.
  18. Brush oil or milk and keep for second rising, for about 30 minutes.
  19. Meanwhile preheat the oven , with both rods on at 200 degrees for 10 minutes.
  20. Pop the tin in the oven and bake for 13 to 15 minutes.
  21. Raise the temperature to 250 degrees and again bake for 4 to 5 minutes, to get browning effect on the buns.
  22. Brush the ready buns with oil or butter.
  23. Let it stand for 5 minutes and then de mould.
  24. Let them cool on a wire rack for sometime.
  25. Bhaji Method - Heat the oil in a heavy bottom pan.
  26. Add the onions and Capsicum.
  27. Cook till soft.
  28. Add in the garlic and chilli paste.
  29. Cook for a minute.
  30. Put in the tomatoes.
  31. Cover and cook for 10 minutes.
  32. Add in all boiled vegetables and seasonings.
  33. Cover and cook for 15 to 20 minutes.
  34. Add water to adjust consistency and bring to a boil.
  35. Using a Pav Bhaji presser / Crusher , lightly crush the Sabji
  36. While serving add in little butter.
  37. Serve with buttered buns, onion slices and lemon wedges.
