Banana oats Muffin

Ingredients to make Banana oats Muffin

  • 3 ripe bananas mashed
  • 1.5 cup oats
  • 1/4 cup brown sugar(I have used jaggery powder)
  • 2 Eggs
  • 50 grm butter
  • 2 tbsp curd
  • 1/4 tsp baking powder
  • 1 tbsp cinnamon
  • For the Garnish
  • 1 sliced banana
  • 1 tsp cinnamon powder

How to make Banana oats Muffin

  1. Mash the bananas and keep aside
  2. Take the butter and sugar and cream it for 2 mins
  3. Add eggs and whisk
  4. Add cinnamon powder & baking powder
  5. Add bananas, oats and curd
  6. Give a nice mix
  7. Fill in the muffin cups (can add choco chips) and bake at 180 degrees preheated oven for 20 to 25 mins
  8. For garnish: Take a non stick pan and add sliced bananas
  9. Add cinnamon powder and let it fry
  10. Turn and repeat
  11. Garnish the muffins with banana slices and serve.
My Tip: Jaggery powder is used here. It gives a nice texture and colour to the muffins.
