Baigan Ka Bharta

Ingredients to make Baigan Ka Bharta

  • Baigan 2 large
  • mustard oil 1/2 cup
  • onions 4 large
  • tomatoes 4-5 large
  • cumin seeds 1/2 tsp
  • Garam masala 1/2 tsp
  • salt as per taste
  • green chillies 2 no

How to make Baigan Ka Bharta

  1. Wash two large baigan
  2. Peel the skin with the peeler
  3. Cut into small pieces
  4. In a pressure cooker add one glass water then add chopped pieces of baigan
  5. Close the lid and give 2 whistles
  6. Heat mustard oil in a wok
  7. Heat mustard oil when some smoke comes out switch off the flame
  8. After two whistles drain out excess water of boiled baigan pieces
  9. Add cuminseeds in heated mustard oil let it crackle then add chopped onions
  10. Roast onions till light golden colour then add chopped tomatoes
  11. Add salt as per taste, red chilli powder, never add turmeric powder as it gives a red hue to the bharta
  12. Stir it well then close the lid and simmer till tomatoes gets tender
  13. Finally add boiled baigan pieces and mix it well
  14. Roast bharta on medium slow flame
  15. Stir occasionally till oil leaves the sides of the wok
  16. Add garam masala and garnish with coriander leaves
  17. Enjoy this easy prepared baigan ka bharta with hot chapati and curd.
