Cauliflower Barfi

Ingredients to make Cauliflower Barfi

  • 1 cauliflower (Medium) grated
  • sugar 5 tbsp
  • milk 1 liter
  • Desi ghee 2 tbsp
  • cardamom powder 1 tsp
  • Chopped pistachios 2 tsp
  • Chopped almonds 2 tsp
  • kewra water 2-3 drops
  • Silver leaf 1
  • nutmeg a pinch

How to make Cauliflower Barfi

  1. Take milk in a pan and cook till it becomes thick and creamy, add sugar and cardamom powder. Keep aside.
  2. In another pan add ghee, grated cauliflower and saute on a high flame. (Let a little bit of crunch remain) Add a pinch of nutmeg powder and mix well.
  3. Add this to the first pan, mix both and add 2-3 drop of kewra water. Mix well.
  4. On a flat dish, apply ghee and spread the mix properly. Put it in the refrigerator to set (1 hour). Sprinkle chopped pistachio and almonds on it and cut the barfi in to desired pieces.
  5. Garnished with a Silver leaf before serving.
