Ingredients to make Spiced mixed fruits in rum cake

  • Wheat flour - 3/4 cup
  • APF - 3/4 cup (use any one or mixture of both as I did)
  • Sugar - brown (preferably) - 1 cup
  • Baking powder - 1 tsp
  • Baking Soda - 1/2 tsp
  • Oil - 1/2 cup
  • Curd - 1/2 cup
  • Vanilla essence - 1 tsp
  • Spices: Pepper powder - 1/4 tsp
  • Cinnamon powder - 1/2 tsp
  • Cardamom powder - 1/2 tsp
  • Dry fruits soaked in rum - 3/4 cup (used mixture of dried cherries, cranberries, fruit peels, almonds, cashews, black currants, dates)
  • Milk - 1/4 cup (only if you require to adjust the consistency of batter)

How to make Spiced mixed fruits in rum cake

  1. Preheat oven to 180 degrees
  2. Mix the sugar and curd till sugar dissolves
  3. Add the vanilla essence
  4. Add in the baking powder and baking soda.
  5. Turns frothy in few minutes
  6. Stir in the oil gently
  7. Then add the dry fruits soaked in rum along with the soaked rum if desired
  8. Now add the flours in batches, sieved with the spice powders, into the frothy mixture.
  9. Mix gently using the cut and fold method
  10. Bake at 170 degrees for 35 to 40 minutes
  11. Do check with a toothpick if its done or else bake a little longer

My Tip:

Had soaked a bottle of dry fruits with a cup of rum and keep using it for cakes whenever I want to bake this.
