ABOUT Goji Berries, Prunes and Pistachio Tea Cake RECIPE

Power packed cake for children who run away from dry fruits.

Ingredients Serving: 6

  1. Eggs - 2
  2. Maida - 1 + 1/2 cup
  3. strawberry yoghurt - 100gms
  4. Butter - 50 gms
  5. baking powder - 1 + 1/4 tsp
  6. Nutmeg powder - a pinch
  7. Brown sugar - 2 tbsp
  8. Castor sugar - 3 tbsp
  9. Gogi berries diced - 2 tbsp
  10. Pista diced - 1 tbsp
  11. Prunes diced - 6 to 7

Instructions

  1. Beat eggs and sugar together until light and frothy.
  2. Add yogurt and beat again.
  3. Mix butter which should have been kept at room temperature.
  4. Mix well maida, baking powder, nutmeg powder and add in the egg sugar mixture. Beat well again.
  5. Dust all the dry fruits with a little flour and mix in the cake mixture.
  6. Bake for 40 minutes, in a preheated oven at 180°C or until a skewer comes clean when inserted in the cake.
  7. You may adjust the time and temperature as per increase or decrease in the quantity.

Wow, so beautifully made! I am sure the kids must love them. What else can i use instead of Gogi berries?
