Healthiest cookies i have made till date. Not only are these cookies packed with nutrients but also vegan and gluten free.

Ingredients Serving: 6

  1. Ripe bananas - 2
  2. Oats - 1 cup
  3. Flaxeed - 1/2 cup
  4. Shredded coconut - 1/4 cup
  5. Slices almonds - 1/4 cup
  6. Salt - a Pinch
  7. Chocolate chips - 1/2 cup

Instructions

  1. Preheat oven to 200 degrees.
  2. Prepare a parchment paper lined baking tray.
  3. In a bowl mash the bananas.Add in the oats,flaxeed,coconut, almonds and salt.Mix together with a spoon.
  4. Add in the chocolate chips and mix together again.
  5. Now scoop out the cookie batter on the lined baking tray.The cookies don't spread so no need to worry about spacing too much.
  6. Press down gently if flatter top is desired.
  7. Bake for about 18-20 minutes or until lightly golden brown on outside.
  8. Let cool for 8-10 minutes before serving.
  9. Enjoy!!
