Ingredients Serving: 4

  1. 4 Thai Rice Papers
  2. 1 cup vegetable juliennes (carrot, capsicum, bell peppers, cabbage)
  3. 1.5 cups boiled maggi noodles
  4. 1/2 tsp minced ginger
  5. 2 minced green chilies
  6. 1 tsp soy sauce
  7. 1.5 tsp tabasco sauce/ red chili sauce
  8. 1.5 tsp tomato sauce
  9. 1 tsp vinegar
  10. 1/2 tsp crushed black pepper
  11. 1 pinch sugar
  12. Salt to taste
  13. 2 tbsp olive oil
  14. I cup water

Instructions

  1. Heat oil in a wok and add grated ginger and green chilies and saute for a second.
  2. Now quickly add all the chopped vegetables and saute them all till they are semi cooked.
  3. Now add vinegar and all the sauces, stir well and add a pinch of sugar as well.
  4. Once the sauce starts to boil season it with salt and black pepper.
  5. Now add boiled noodles and toss them all nicely such that everything incorporates well.
  6. Stir fry for a couple of minutes and turn off the heat. Keep aside to cool.
  7. In a broad base tray add water, make sure the water does not spill off.
  8. Take a rice paper and immerse into water for 8-10 secs. Take out the rice paper and place it on a clean counter.
  9. Add spoonful of maggi noodles horizontally leaving around 1/2 inch gap on sides.
  10. Fold in the sides and then carefully start rolling the rice paper. As the rice paper is soft, it'll seal on its own.
  11. Keep the roll aside and make similar wraps.
  12. Take a sharp knife and cut the wrap into two half from the center and serve with Schezwan sauce or any of your favorite cheese dip.
