ABOUT Matki/Sprouts Curry Maharashtrian Style RECIPE

Sprouting is the practice of germinating seeds to be eaten raw or cooked. It is highly advised to include sprouts in your daily diet as it is extremely high in protein and when eaten raw can induce calmness to the body and mind and reduce your stress level because it has high oxygen content as well.

Ingredients Serving: 4

  1. 2 cup sprouts
  2. 1 onion finely chooped
  3. 1 tomato finely chopped
  4. 3-4 garlic cloves
  5. 1 dry red chili
  6. 2 tbsp peanuts
  7. Salt to taste
  8. 2 tbsp grated coconut
  9. 1 tsp mustard seeds
  10. 1 tsp cumin seeds
  11. Pinch of hing
  12. 1 tsp turmeric powder
  13. 1 tbsp oil
  14. 2 green chili finely chopped
  15. Some coriander leaves finely chopped for garnishing
  16. few curry leaves

Instructions

  1. Roast peanuts,dry red chili and garlic cloves in 1 tsp oil. Grind to a coarse paste along with coconut.
  2. Heat oil in pressure cooker.
  3. Add hing followed by curry leaves and green chilies.
  4. Add onions and cook till it turns golden pink.
  5. Add finely chopped tomatoes, the peanut paste made above and sprouts.
  6. Add turmeric powder and salt to taste .
  7. Add 1/2 cup water. Close the lid and cook till you hear 2 whistles.
  8. Switch off the flame.
  9. Allow pressure to drop.
  10. Garnish with finely chopped coriander leaves
