Ingredients Serving: 4

  1. 300 grams paneer (malai paneer)
  2. 6 big tomatoes
  3. 2 tbsp Oil
  4. 2 bay leaf
  5. 3 cloves
  6. 1 tsp cumin seeds
  7. 2 green chili roughly chopped
  8. 1 tsp cumin powder
  9. 1 tsp red chili powder
  10. 1 tsp turmeric powder
  11. 1 tbsp Butter
  12. 1 tbsp crushed kasuri methi
  13. 1 tbsp fresh cream
  14. 1 tsp coriander leaves
  15. ½ cup Milk
  16. Salt and sugar to taste

Instructions

  1. Blend tomatoes to a smooth paste.
  2. Soak cashew nuts in luke warm water.
  3. Heat oil in a wok. Add cumin seeds and green chilies.
  4. Add tomatoes, cover and cook on low flame for 10-12 minutes. This will also prevent tomatoes from spilling out.
  5. Open lid, add turmeric powder, red chili powder, cumin powder. Mix and cook for 5-6 minutes more.
  6. Blend cashew with milk to a smooth paste.
  7. Heat butter in a tempering pan. Add kasuri methi and cook till it turns dark green.
  8. Add this to tomato gravy. Add cashew paste.
  9. Add salt and sugar. Add garam masala. Mix well.
  10. Add 1 cup of water and turn on the heat to give it a boil.
  11. Add Paneer pieces. Mix gently so it does not break. Cook for 2 minutes.
  12. Take out on a serving bowl.
  13. Garnish with fresh cream and coriander leaves.
  14. Serve with Roti.
