ABOUT Lazzadar Chana daal Lauki Masala RECIPE

We know bottle gourd is a little boring, but it wont be after you try this lazzadar masala gravy.These days Lauki has been quite in fame and we all know the health benefits of lauki. Bottle gourd is rich in dietary fiber, both, soluble and insoluble. Hence, it helps in curing constipation, flatulence and even piles. It is also easy to digest.

Ingredients Serving: 4

  1. 1 small bottle gourd:- I have taken half of 550 gm bottle gaurd and chopped in a bite size pieces
  2. 1 cup split bengal gram (Chana dal)
  3. 1 medium sized onion finely cut lengthwise
  4. 1 medium sized tomato finely cut into small cubes
  5. salt as per taste
  6. For Masala Puree:-
  7. Onion:- 1 small chopped roughly
  8. Ginger :- 1 pinch
  9. Garlic:- 8-10 cloves
  10. Tomato:- 1 chopped roughly
  11. Corriander (Dhaniya) seeds or Powder:- 2 tsp
  12. For dry masala powder
  13. Red Chilli Powder:- 2 tsp
  14. Kashmiri Red Chilly powder:- 1tsp
  15. Turmeric Powder:- 1 tsp
  16. Amchur Powder:- 1 tsp or you can take 1tsp lemon juice
  17. For tempering
  18. Bay leaf:- 1 big
  19. Cinnamon stick:- 1 inch piece
  20. Cloves:-3 nos
  21. Black pepper kernels:- 5-6
  22. Cummin Seeds;- 1 tsp
  23. Dry Red chilly:- 2nos
  24. Asafoetida (hing):- 1/2 tsp
  25. Ghee:- 1 tbsp
  26. Curry Leaves:- few sprigs
  27. For garnishing
  28. Coriander leaves;- chopped finely(a handful)
  29. Kasuri Methi:- 1tbsp

Instructions

  1. Soak chana daal (split Bengal Gram) atleast 3-4 hours.
  2. In a cooker, add soaked chana dal and cut lauki pieces. Add 3-4 cups of water enough for cooking. Cook it on medium flame till 3-4 whistles
  3. Make a fine paste of ingredients given above for masala paste and set aside
  4. In a kadhai, heat 2-3 tbspoon oil. Add a bay leaf, curry leaves, dry red chillies, cloves, black pepper and cinnamon.Saute for 1/2 min
  5. Add cumin seeds. Once it splutter then add a pinch of asafoetida.
  6. Add chopped onions and saute till it gets tender. Add chopped tomatoes and saute till it gets mushy.
  7. Add turmeric powder and saute for a min,add red chilli powder 2-3 tspoon as per your taste and dry mango powder and mix them well.
  8. Add prepared masala paste and salt as per taste.
  9. Saute the masala well till it leaves off the oil from sides
  10. Add dal and lauki to the masala mixture and mix it well.
  11. Add little water if required, cook it for 5 mins
  12. Switch off the flame and add coriander leaves and kasuri methi, cover with lids
  13. Heat Ghee in another pan, pour over curry and cover once again with lid to set the aroma of kasuri methi and ghee
