Ingredients to make Milk bread

  • maida 2 cups
  • Milk 1 cup + 1.5 tbsp
  • salt 1 tsp
  • butter 4 tsp
  • Milk powder 1.5 tbsp
  • Instant yeast 2 tsp
  • sugar 2 tbsp
  • oil for greasing

How to make Milk bread

  1. Warm milk just enough to feel the heat after 4 seconds when you test with your finger
  2. Add sugar
  3. Add instant yeast and mix well
  4. Keep this mixture for proofing for 10 minutes
  5. To a mixing bowl add maida, milk powder and salt, mix well
  6. Add the yeast mixture to the maida and combine in the mixing bowl
  7. Dust some maida on the working surface
  8. Take the lumpy mixture onto the working surface, add the butter
  9. Knead the mixture for 15 to 20 minutes
  10. Test the dough through film test
  11. Once the dough is ready, grease a bowl well with oil
  12. Tuck in the dough and shape it to form a ball and place it in the greased bowl
  13. Cover the bowl with a moist cloth and let it rest for about an hour or until the dough doubles in volume
  14. Take out the dough which should have doubled in volume
  15. Take out the dough and place it on a floured work surface with smooth side facing down
  16. Roll gently the dough into an elliptical shape without pressing too much. All the air that is trapped will be removed if the dough is rolled with pressure
  17. Apply some milk onto the edges
  18. Fold the elliptical shaped dough into a bread loaf
  19. Grease the bread mold well with oil
  20. Carefully lift the bread loaf and place it in the mold seam side down
  21. Cover with the moist cloth and allow it to rest for an hour or until it doubles in volume
  22. Preheat oven to 200 deg C
  23. Place the bread mold on a small wire rack and bake for 30 minutes at 200 deg C
  24. Once baked, take out from the oven, brush some milk and allow it to cool for about 5 minutes
  25. With the help of a knife, try to loosen the edges and remove the bread from the Mold
  26. Wrap it in the moist cloth and allow it cool down completely
  27. Once cooled, cut them into pieces and enjoy with some jam or make some sandwiches

My Tip:

Kneading is very important in the entire process. So do not compromise in that.
