Chocolate Dacquoise

Ingredients to make Chocolate Dacquoise

  • 100g egg whites
  • 30g castor sugar
  • 80g almond powder
  • 20g cocoa powder
  • 100g icing sugar

How to make Chocolate Dacquoise

  1. Preheat the oven to 170 degrees Celsius. Prepare a tray lined with butter paper. Prepare a piping bag with a 12/14mm nozzle.
  2. In an electric mixer beat the egg whites and gradually add the castor sugar to form a French meringue.
  3. Sieve the cocoa powder, almond powder and the icing sugar together and gently fold into the meringue using the cut and fold method.
  4. Pipe out 2 spirals on the baking tray and bake for 20 minutes until the top crust forms.
  5. Allow to cool completely
