SAFFRON CARAMEL PILAF

Ingredients to make SAFFRON CARAMEL PILAF

  • 1 cup Basmati rice
  • 1 cup milk
  • 1 Cup water
  • 2 tsp ghee
  • 2 green cardamom
  • 2 cloves
  • 7 to 8 dried red cherries
  • 1 tbsp. cashew nuts
  • 1 tbsp. raisins
  • Handful of green peas
  • 1 cup pineapple chopped
  • Pinch of salt
  • 1 tsp saffron
  • 2 to 3 tbsp brown sugar based on the sweetness you want.

How to make SAFFRON CARAMEL PILAF

  1. Soak Basmati Rice in water for 30 minutes.
  2. Heat 2 tsp ghee in a non-stick skillet.
  3. Add cardamom and cloves.
  4. Add Basamti Rice and fry the rice for 2 to 3 minutes
  5. Add green peas, cherries, raisins and fry again for couple of minutes
  6. Switch off the flame.
  7. Heat 1 cup of milk in a saucepan.
  8. Add saffron to it and let the colour dissolve in milk.
  9. Pour this concoction over the rice.
  10. In a separate pan , add pineapple and brown sugar and cook till sugar caramelizes and coats the pineapple nicely.
  11. Add this mixture to rice.
  12. Add 1 cup of milk and pinch of salt.
  13. Cover and cook on lowest flame till rice is perfectly cooked. This will take about 12 to 15 minutes .
