Ingredients to make Lauki ka bhartha (Bottle gourd bhartha)

  • lauki:-1/2 (I have taken half lauki from 550 gms lauki)
  • onion:- 1 finely choped
  • potato:- 1 small boiled and mashed
  • tomato:- 2 finely chopped
  • garlic:- 2-3 chopped finely
  • ginger:- nail size ginger chopped finely
  • Cummin Seeds:- 1 tsp
  • fennel seeds ;- 1 tsp
  • Stone flower:- 1 small piece
  • turmeric powder:- 1/2 tsp
  • chilli powder:- 2 tsp
  • coriander Powder:-2 tsp
  • Kasurimethi:- 1 tsp
  • coriander leaves:- handful chopped finely
  • salt to taste
  • oil as required

How to make Lauki ka bhartha (Bottle gourd bhartha)

  1. Mash boil potato and set aside
  2. Grate lauki and set aside
  3. Heat oil add cummin seeds, fennel seeds and stone flower and fry for 2-3 secs
  4. Add chopped onion, garlic and ginger fry until it turns light brown in color
  5. Add grated lauki and saute for 6-7 mins, add chilly powder, turmeric powder, coriander powder and salt and fry for 2 mins
  6. Add chopped tomato and fry well, cover with lid and cook in a low flame until tomatoes turn mushy
  7. Add mashed potato and stir well, add kasurimethi and half of coriander leaves mix well and cover with lid and cook for 2 mins
  8. Remove from stove garnish with remaining coriander leaves
  9. Serve hot with Roti
