Whole Wheat Eggless Pineapple Muffins

Ingredients to make Whole Wheat Eggless Pineapple Muffins

  • 1 & a 1/2 cup - whole wheat flour
  • 1 cup - Yogurt
  • 3/4 cup - sugar
  • 1/2 teaspoon - baking soda
  • 1 & a 1/4 teaspoon - baking powder
  • 1 teaspoon - pineapple essence
  • 1/2 cup - finely chopped pineapple slices
  • 1/2 cup - olive oil

How to make Whole Wheat Eggless Pineapple Muffins

  1. Mix powdered sugar and Yogurt and beat well.
  2. Add baking powder and baking soda. Keep it for a few minutes.
  3. The mixture will become frothy and will rise up.
  4. Add oil and essence and mix well.
  5. Add whole wheat flour in two parts. Do not mix too much.
  6. The batter should be smooth.
  7. Add pineapple pieces, give a final stir.
  8. Pour the batter in the cupcake pan. Bake in a pre-heated oven at 200°C.
  9. Reduce the temperature to 185°C and bake for 25 minutes or till a skewer inserted in the center comes out clean.
My Tip: Top it up with some whipped cream and cherry, the cupcake is ready.
