ABOUT Ridgegourd peels maggi shami kabab in mini pizza style RECIPE

Shami means evening i.e. kababs for evening snacks party.This recipe is made out of ridge gourd outer skin peels and boiled with gram lentil. Shami kababs are from awadh and specially made for sultans who don't have teeth they just melt in mouth and generally made from chicken or mutton. But i have used peels of ridge gourd skin. This recipe is a fusion of kabab and pizza on top of it peri peri capsicum paneer peri peri maggi has gives super twist to the taste of kabab. .

Ingredients Serving: 6

  1. For the kabab - Ridge gourd skin(peel)- from 1 kg ridge gourd
  2. Gram lentil (daal) -1 fist
  3. Whole garam masala - 4-5 black peppercorn, 1 bay leaf, 1/2 inch cinnamon, 2 cardamom
  4. Grated ginger - 1/2 inch
  5. Crushed garlic - 4-5 cloves
  6. Green chillies - 3-4 or as per taste
  7. Salt to taste
  8. Water - 2 cups
  9. Instant masala oats - 1/4 cup
  10. Bread crumbs - 1/2 cup
  11. Egg - 1
  12. Fried onions - 1/4 cup
  13. Chaat masala - 2 tablespoon
  14. Oil -1 tablespoon +2tablespoon while baking
  15. For the maggi noodles -
  16. Maggi perri perri masala - 1
  17. Oil 1 tablespoon
  18. Chopped Onions - 1/2 cup
  19. Chopped capsicum - 1/4 cup
  20. Tomato chopped - 1 cup
  21. Salt to taste
  22. Red chilli powder to taste
  23. Water - 1cup
  24. Cottage cheese - 200 gram
  25. Amul Cheese 3 cubes

Instructions

  1. Clean ridge gourd peel with fresh water 2 times.
  2. Once more clean peels(skin) with luke warm water.
  3. Take a pressure cooker add in cleaned peels, gram lentils, salt, green chillies, ginger, garlic, whole garam masala.
  4. Cook for 5 minutes under high flame then reduce the flame to medium .
  5. Cook for another 10 - 15 minutes or until gram lentil becomes soft.
  6. Release the pressure and open the lid of pressure cooker.
  7. if any water left in the cooker then dry that water by cooking under high flame without lid.
  8. Cool this batter and make a coarse paste out of it.
  9. Now add fried onions, instant masala oat powder, bread crumbs, salt,chilli powder,egg, chaat masala and oil.
  10. Mix everything with your fingers and keep this batter inside the fridge to chill for 20 minutes.
  11. For peri - peri maggi masala
  12. Take a pan heat 1 tablespoon oil.
  13. Add in chopped onions and chopped capsicum saute for 30 seconds.
  14. To this add chopped tomatoes.
  15. Add salt and chilli powder as per taste and saute till tomatoes becomes little soft.
  16. Add in peri - peri masala, water.
  17. Let the water boil then add maggi noodles.
  18. Cook for two minutes.
  19. Add in shredded cottage cheese and shredded Amul cheese mix with cooking spoon all the ingredients well.
  20. Cook until all the water dries up from noodles.
  21. Let it cool for 10 minutes.
  22. Preparations of shami kabab from ridge gourd peels with peri peri maggi noodles topping in style of mini pizza
  23. Meanwhile take out the kabab batter from the fridge.
  24. Preheat the oven at 200 degree centigrade. And grease the baking tray.
  25. Divide this batter into 6 equal balls.
  26. Take one ball and press on your palm with your fingers and give circular disc shapes to each ball.
  27. Take ready 2 tablespoon of peri peri capsicum paneer maggi and keep it at the centre of shami kabab.
  28. Grate some cheese on each shami kabab topping.
  29. Bash with brush some butter or oil on each kabab maggi pizza.
  30. Bake for 10 minutes
  31. Now Your yummy ridge gourd peels shami kabab with peri peri cheesy maggi topping is ready.
