Ingredients to make Hot and sour noodle soup

  • 1 pack : maggi noodles
  • 1 can : Vegetable broth
  • 2 tbsp : corn starch
  • 3 tbsp : water(to mix with corn starch)
  • 1 1/2 cups : water
  • 1 cup : Sliced mushrooms
  • 6 nos : Baby corn sliced
  • 3 tbsp : French beans finely sliced
  • 3 tbsp : Soy sauce
  • 3 tbsp : Apple cider vinegar
  • 1 tsp : Black pepper
  • 1/4 tsp : sugar
  • salt to taste (optional)

How to make Hot and sour noodle soup

  1. Add the cornstarch and water together, stir to combine well. Set aside.
  2. Add the vegetable broth and water to a medium-sized soup pot on medium heat. Bring it to boil. Add the noodles cook for 2 minutes. Add the sliced mushrooms, baby corn, french beans. Continue boiling for 2 more minutes.
  3. Add the soy sauce, vinegar, sugar, salt ( if using) and black pepper. Stir to combine well.
  4. Add in the cornstarch mixture, stir continuously to thicken the soup. Turn off the heat.
  5. Serve hot with a baguette.

My Tip:

Soy sauce and vegetable broth have high amounts of salt so add accordingly.
