Ingredients to make Kwality channa masala

  • 1/2 kg white chana
  • 2 tsp salt
  • 6 cups of water
  • For roasting
  • 3 tsp coriander dry
  • 3 tsp jeera cumin seeds
  • 1 piece of cinnamon
  • 4 brown cardamoms
  • 4 tsp anar dana
  • 4 tsp amchur
  • Black pepper a few
  • For gravy
  • 3 onions
  • 2 cloves of garlic
  • 4 green chilli
  • 50 gm ginger
  • ghee or oil
  • For garnishing
  • Boiled potatoes, onions and tomato rings

How to make Kwality channa masala

  1. Soak chanas in a pressure cooker over night
  2. In the morning boil by 3 or 4 whistles or till tender and water evaporates
  3. Till that roast all dry ingredients on tawa till black but not too burn
  4. Grind them keep aside
  5. Grate gravy ingredients
  6. Fry gravy in 2 tbsp of ghee or oil till brown
  7. Now mix dry masala in onion mixture. Mix well
  8. Pour this mixture on boiled chanas
  9. Cook and mix nicely until water dried
  10. While serving decorate with boiled potatoes onion and tomato rings and green coriander

My Tip:

You can skip onion gravy masala those not want to eat onions. Only pour dry masala over boiled channas and cook.
