A very tasty and classic makeover to the plain maggi noodles.This Classic Italian egg-free noodle recipe features a creamy, decadent mushroom-spinach carbonara sauce that is also very easy and quick to prepare.

Ingredients Serving: 2

  1. 1 packet maggi noodles
  2. 1 cup sliced mushrooms
  3. 1/2 cup shredded baby spinach
  4. 1/4 cup finely chopped onions
  5. 2 garlic cloves smashed and finely chopped
  6. 1 teaspoon dried oregano
  7. 1 tablespoon all-purpose flour
  8. 3/4 cup skim milk
  9. 1/4 cup low-fat sour cream
  10. 2 tablespoons grated parmesan cheese
  11. 1/4 teaspoon fresh ground black pepper
  12. 1 tablespoon olive oil

Instructions

  1. Boil noodles according to package instructions. Save 1/4 cup of cooking water to loosen sauce later, if needed. Drain noodles and toss with a teaspoon of olive oil so they don't stick. Keep it aside.
  2. Mix sour cream and parmesan cheese in a separate bowl till it forms a smooth mixture. Keep it aside.
  3. Heat medium skillet over medium heat and add a tablespoon of oil into it. Add onion and garlic and saute 3 minutes, until onion is soft.
  4. Add mushrooms and saute at medium high heat until it loses its moisture and becomes soft.
  5. Add spinach and saute at medium heat for 3-4 minutes. Add oregano, maggi masala, salt and cook for 1 minute.
  6. Add flour and stir to coat the mushroom spinach mixture.
  7. Add milk and bring to a simmer. Cook until the sauce thickens, stirring frequently.
  8. Remove from heat and stir in sour cream and parmesan mixture.
  9. Add the noodles to the skillet and toss with sauce to coat
  10. Transfer the noodles into a bowl. Garnish it with freshly ground pepper and serve it hot.
