Ingredients to make Maagi dahi puri

  • INGREDIENTS FOR PURI:
  • -2 cups sooji(semolina)
  • -1/8tsp baking powder
  • -pinch of salt
  • -3 to 4tbsp All purpose flour
  • INGREDIENTS FOR DATES TAMARIND CHUTNEY:
  • -1/4cup tamarind soaked in 1/4cup of water
  • -1 cup dates deeseeded and soaked in 1/2 cup water
  • -coriander powder 2 tsp
  • -1tsp red chilli powder
  • -1tsp ginger powder
  • -black salt for taste
  • INGREDIENTS FOR RED CHILLI GARLIC CHUTNEY:
  • -10 dry red chillies
  • -6 to 7 garlic cloves
  • -salt for taste
  • INGREDIENTS FOR GREEN CHUTNEY:
  • 1 cup of coriander leaves
  • 2 green chillies
  • Salt for taste
  • INGREDIENTS FOR MAAGI DAHI PURI:
  • -30 puris
  • -Roasted maagi with masala
  • -3/4cup crumbled paneer
  • -Fresh green peas boiled
  • -3/4 cup of dates tamarind chutney
  • -1/2 cup of red chilli garlic chutney
  • -1/2 cup of green chutney
  • -spicy tomato ketchup
  • - 2 tsp Red chilli powder
  • - 1 to 2 tsp chat masala
  • - 2 tbsp coriander powder
  • -aamchur powder
  • -pani puri masala
  • -salt for taste
  • -Thick curd
  • -pinch of sugar
  • -sev (I used aloo bujiya)

How to make Maagi dahi puri

  1. First i will show the procedure for preparing crispy puris
  2. Take 2 cups of semolina and add 1/8 tsp baking powder, salt to it and mix well
  3. Add water slowly and mix.You can see semolina absorbs the added water
  4. Now to this add 3 to 4 tbsp All purpose flour
  5. Now knead to a non sticky dough. Finally add oil and knead. Kneading step is most important. Final dough will be elastic in nature but non-sticky.
  6. Grease the surface with oil.Take small portion of the dough and roll it flat and thin with rolling pin
  7. Now cut in to small circles with help of some lid or wide cap of bottle
  8. Fry them in oil until they turn light brown color. They puff up as soon as you add in oil.
  9. After frying if you see some being moist still. Bake them at 150 degree centigrade for 15 minutes. You can see they become totally crisp and looses moisture
  10. I recommend to fry them to little light brown color and bake them as they become very crispy after baking. These crispy puris can be used for both dahi puri and pani puri
  11. -PROCEDURE FOR DATES TAMARIND CHUTNEY:
  12. soak 1/4 cup tamarind in 1/4 cup of water and microwave. Similarly soak cup of dates in half cup of water and microwave Extract tamarind juice and add to blender. Add even soaked dates,coriander powder,red chilli powder ,black salt,ginger powder,cumin powder and blend by adding water
  13. Here is the dates and tamarind chutney
  14. PROCEDURE FOR RED CHILLI GARLIC CHUTNEY:
  15. Soak about 10 red chillies in hot water for 30 minutes. Add soaked chillies in blender with 6 to 7 garlic cloves and salt.
  16. Blend to paste by adding water to it.
  17. You can use these 2 chutneys for paneer dahi puri. You can also prepare green chutney by blending coriander leaves with chilli and salt
  18. PROCEDURE FOR MAAGI DAHIPURI: Take maagi and roast it with masala
  19. Take the crumbled paneer in pan and add all spices red chilli powder,coriander powder,chat masala, aamchur powder,cumin powder,pani puri masala and salt. Adjust all spices according to your spice levels.
  20. Mix all spices with paneer and slightly heat it for 3 minutes. Add spicy tomato ketch up to it and mix.
  21. Next step is filling. Take puris and make a hole at the center for filling.
  22. First add crumbled paneer and roasted maagi in all puris
  23. Next add few boiled fresh green peas on top of maagi
  24. Now add all chutneys green chutney, dates tamarind chutney
  25. Add finely sliced onions
  26. Top them with thick curd, sev. Sprinkle little chilli powder, chat masala on top. Garnish with coriander leaves or any other toppings,( Add little sugar in curd before proceeding.)
